  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes, halved

  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup hummus

Instructions

  1. Marinate the Steak: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add steak and coat well. Let marinate for at least 20 minutes or up to 8 hours in the refrigerator.
