  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons crumbled feta cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil: In a large skillet over medium-high heat.
  2. Cook beef: Brown and cook the ground beef, breaking it up with a spatula, for 6–8 minutes until cooked through.
  3. Add onion and garlic: Cook until fragrant and softened, about 2–3 minutes.
  4. Include vegetables: Stir in bell pepper, zucchini, and cherry tomatoes. Cook for 5–6 minutes until tender.
  5. Season and finish: Add olives, oregano, cumin, red pepper flakes, salt, pepper, and lemon juice. Cook for another minute. Remove from heat, sprinkle with feta and parsley. Serve warm.
