1 tablespoon olive oil
1pound ground beef (85-90% lean)
1 small red onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
1 zucchini, chopped
1/2cup cherry tomatoes, halved
1/4cup Kalamata olives, sliced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes (optional)
Salt and black pepper to taste
1 tablespoon fresh lemon juice
2 tablespoons crumbled feta cheese
Fresh parsley for garnish
Instructions
Heat olive oil: In a large skillet over medium-high heat.
Cook beef: Brown and cook the ground beef, breaking it up with a spatula, for 6–8 minutes until cooked through.
Add onion and garlic: Cook until fragrant and softened, about 2–3 minutes.
Include vegetables: Stir in bell pepper, zucchini, and cherry tomatoes. Cook for 5–6 minutes until tender.
Season and finish: Add olives, oregano, cumin, red pepper flakes, salt, pepper, and lemon juice. Cook for another minute. Remove from heat, sprinkle with feta and parsley. Serve warm.
