Ground Beef Stir Fry:
1lb lean ground beef
2 tablespoons olive oil
1 medium red onion, sliced
3 cloves garlic, minced
1 red bell pepper, sliced
1 zucchini, sliced into half moons
1cup cherry tomatoes, halved
1/2cup Kalamata olives, pitted and halved
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
1/4cup fresh parsley, chopped
Juice of 1 lemon
1/2cup crumbled feta cheese
Instructions
Heat the skillet: Heat olive oil in a large skillet over medium heat.
Cook beef: Add ground beef and cook until browned, breaking it up with a spoon, about 5–7 minutes. Drain excess fat if necessary.
Season and finish: Add cherry tomatoes, olives, oregano, cumin, red pepper flakes, salt, and pepper. Cook for 3–4 minutes until vegetables are tender. Remove from heat, stir in lemon juice and parsley. Top with feta before serving.
Notes
This stir fry pairs well with rice, quinoa, or pita bread.
You can substitute ground turkey or chicken for beef.
