Ground Beef Stir Fry:

  • 1 lb lean ground beef
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half moons
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese

Instructions

  1. Heat the skillet: Heat olive oil in a large skillet over medium heat.
  2. Cook beef: Add ground beef and cook until browned, breaking it up with a spoon, about 5–7 minutes. Drain excess fat if necessary.
  3. Add vegetables: Add onion and garlic, sauté for 2–3 minutes. Stir in bell pepper and zucchini, cook for 5 minutes until slightly tender.
  4. Season and finish: Add cherry tomatoes, olives, oregano, cumin, red pepper flakes, salt, and pepper. Cook for 3–4 minutes until vegetables are tender. Remove from heat, stir in lemon juice and parsley. Top with feta before serving.
