  • 1/4 cup milk or dairy-free alternative
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup baby spinach, chopped
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons Kalamata olives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • nonstick spray or olive oil for greasing

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with nonstick spray or olive oil.
  2. Prepare the egg mixture: In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Fill the muffin cups: Evenly distribute the tomatoes, spinach, bell pepper, feta, olives, and parsley among the muffin cups. Pour the egg mixture over the vegetables in each cup, filling them about ¾ full.
  4. Bake the egg muffins: Bake for 18–20 minutes, or until the egg muffins are set and lightly golden on top.
  5. Cool and serve: Let cool for 5 minutes before removing from the pan. Serve warm or store in the fridge for up to 4 days.

Notes

  • Customize with your favorite Mediterranean veggies or swap feta for goat cheese.
  • Great for meal prep and can be frozen and reheated.
