  • 1 lb ground beef
  • 4 cups russet potatoes (peeled and thinly sliced)
  • 1 medium yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

For the Sauce:

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup whole milk
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the Beef: In a skillet, cook onion, garlic, and beef. Season with salt, pepper, paprika, and thyme.
  3. Prepare the Sauce: Mix cream of mushroom soup and milk.
  4. Layer the Casserole: Arrange potatoes, beef, soup mixture, and cheese in a baking dish.
  5. Bake: Cover and bake for 45 minutes, then uncover and bake for an additional 15–20 minutes.
  6. Serve: Let the casserole stand before serving. Garnish with parsley if desired.

Notes

  • Yukon gold or red potatoes can be used instead of russets.
