Mashed Potato Cups:
3cups mashed potatoes (leftover or freshly made)
1/2cup shredded cheddar cheese
1/4cup sour cream
1 large egg
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4cup chopped chives or green onions
1/4cup cooked and crumbled bacon (optional)
additional shredded cheese for topping
Instructions
Preheat the oven: Preheat the oven to 375°F and lightly grease a 12-cup muffin tin.
Mix the ingredients: In a large bowl, combine the mashed potatoes with cheddar cheese, sour cream, egg, garlic powder, salt, pepper, chives, and bacon (if using).
Fill the muffin cups: Spoon the mixture into the muffin cups, filling each about 3/4 full. Top with extra cheese.
Bake: Bake for 20–25 minutes until golden and slightly crisp.
Serve: Let cool for 5 minutes, then remove from the tin and serve warm.
