Mashed Potato Cups:

  • 3 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 large egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped chives or green onions
  • 1/4 cup cooked and crumbled bacon (optional)
  • additional shredded cheese for topping

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a 12-cup muffin tin.
  2. Mix the ingredients: In a large bowl, combine the mashed potatoes with cheddar cheese, sour cream, egg, garlic powder, salt, pepper, chives, and bacon (if using).
  3. Fill the muffin cups: Spoon the mixture into the muffin cups, filling each about 3/4 full. Top with extra cheese.
  4. Bake: Bake for 20–25 minutes until golden and slightly crisp.
  5. Serve: Let cool for 5 minutes, then remove from the tin and serve warm.
