Mashed Potato Cheese Puffs:

  • 2 cups mashed potatoes (cooled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh chives

Instructions

  1. Preheat Oven: Preheat oven to 400°F. Grease a 12-cup muffin tin with cooking spray or melted butter.
  2. Mix Ingredients: In a large bowl, combine mashed potatoes, cheddar, Parmesan, eggs, flour, garlic powder, salt, pepper, and chives. Mix well.
  3. Fill Muffin Cups: Divide mixture evenly among muffin cups, filling each about three-quarters full.
  4. Bake: Bake for 20–25 minutes until puffs are golden brown and slightly crispy.
  5. Cool and Serve: Let cool for 5 minutes before removing from the tin. Serve warm.
