Mashed Cauliflower with Sour Cream (Low-Carb)

A creamy, low-carb alternative to mashed potatoes made with cauliflower and sour cream, perfect for those following a low-carb or keto-friendly diet.

  • 1 large head of cauliflower, cut into florets
  • 1/4 cup sour cream
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Fresh chives, chopped (optional, for garnish)

Instructions

  1. Bring a large pot of water to a boil and add cauliflower florets. Cook for 10-12 minutes or until very tender.
  2. Drain the cauliflower well and allow it to sit in the colander for a few minutes to remove excess moisture.
  3. Transfer the cauliflower to a food processor. Add sour cream, butter, and minced garlic.
  4. Blend until smooth and creamy. Season with salt and pepper to taste.
  5. Transfer to a serving bowl and garnish with chopped chives if desired. Serve warm.

Notes

  • For extra flavor, try adding grated Parmesan cheese or a pinch of nutmeg.
  • You can use a hand masher if you prefer a chunkier texture.
  • Ensure cauliflower is well-drained to prevent watery mash.
