Units Scale

Pasta:

  • 12 oz fettuccine or linguine pasta

Shrimp:

  • 1 pound large shrimp, peeled and deveined

Sauce:

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the pasta: Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Cook the shrimp: In a large skillet over medium heat, heat olive oil and butter. Add shrimp, season with salt and pepper, and cook for 1–2 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  3. Make the sauce: In the same skillet, add garlic and red pepper flakes, cooking for 30 seconds until fragrant. Stir in sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, and Italian seasoning. Simmer for 3–4 minutes until the sauce thickens.
  4. Combine: Return the pasta and shrimp to the skillet, toss to coat in the sauce, and cook for another 1–2 minutes until heated through.
  5. Serve: Garnish with fresh basil or parsley before serving.

Notes

  • You can substitute scallops or chicken for the shrimp.
  • Add spinach or mushrooms for extra veggies.
  • For a lighter version, use half-and-half instead of heavy cream.
