  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then cook in the skillet until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add garlic and cook for 1-2 minutes, until fragrant.
  4. Add sun-dried tomatoes, heavy cream, Parmesan cheese, thyme, and red pepper flakes. Stir until the sauce thickens, about 5 minutes.
  5. Return the chicken to the skillet and coat it in the creamy sauce. Simmer for another 2-3 minutes.
  6. Garnish with fresh basil before serving.

  • For a lighter version, you can substitute the heavy cream with half-and-half or coconut milk.
  • If you prefer a stronger tomato flavor, add more sun-dried tomatoes to the sauce.
