  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup uncooked orzo
  • 1 1/4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup fresh basil (chopped)

Instructions

  1. Season the Chicken: Season the chicken with salt and pepper.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden and cooked through. Transfer to a plate.
  3. Cook the Aromatics: In the same skillet, reduce heat to medium, add garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for 1–2 minutes until fragrant.
  4. Prepare the Orzo: Stir in the orzo and toast for 1 minute. Add the chicken broth and heavy cream, bring to a simmer.
  5. Cook the Orzo: Cook uncovered, stirring frequently, for 8–10 minutes or until the orzo is tender and the liquid is mostly absorbed.
  6. Finish the Dish: Stir in Parmesan cheese and fresh basil. Return the chicken to the skillet, nestling it into the orzo. Simmer for 2–3 minutes until heated through.
  7. Serve: Serve warm, garnished with extra basil and Parmesan if desired.
