1/2cup unsalted butter (softened)
2 large eggs
3/4cup buttermilk
1 teaspoon vanilla extract
Chocolate Batter:
1/4cup unsweetened cocoa powder
3 tablespoons hot water
1/2cup semi-sweet chocolate chips (optional)
Instructions
Preheat and Prepare: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Add Wet Ingredients: Add the softened butter, eggs, buttermilk, and vanilla extract. Beat until smooth.
Prepare Chocolate Batter: Mix cocoa powder and hot water to form a paste. Add to half of the batter.
Layer and Swirl: Alternate spooning vanilla and chocolate batter into liners. Swirl together with a toothpick.
Bake: Bake for 18–22 minutes until done. Cool before serving.
