Ingredients
Scale
Sweet Potato Cake
- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- 2 cups all-purpose flour
- 1 cup packed brown sugar
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup maple syrup
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 teaspoon salt
Maple Glaze
- Additional maple syrup for drizzling (optional)
- Butter (amount to combine with maple syrup, approximately 2 tablespoons)
Instructions
- Preheat and Bake Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash and pierce the sweet potatoes, then place them on a baking sheet and bake until tender, about 45 minutes. Remove and let cool.
- Prepare Cake Pan and Oven: Lower the oven temperature to 350°F (175°C). Grease and flour a 9-inch round cake pan to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, brown sugar, baking powder, ground cinnamon, ground nutmeg, and salt until evenly combined.
- Mix Wet Ingredients: In another bowl, combine the mashed sweet potatoes (remove skins), eggs, melted unsalted butter, and maple syrup. Mix until smooth and homogeneous.
- Combine Wet and Dry Ingredients: Gently fold the wet mixture into the dry ingredients until just combined, being careful not to overmix to keep the cake tender.
- Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake in the oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare Maple Glaze: In a small saucepan over low heat, combine maple syrup and about 2 tablespoons of butter. Stir continuously until the butter melts and the mixture is warmed through, creating a smooth glaze.
- Glaze the Cake: Once the cake is completely cooled, drizzle the warm maple glaze evenly over the top. Serve and enjoy!
Notes
- Ensure sweet potatoes are thoroughly baked for the best natural sweetness and smooth texture.
- Do not overmix the batter after combining wet and dry ingredients to avoid a dense cake.
- Maple syrup glaze can be adjusted in thickness by adding more butter or simmering longer.
- This cake can be served warm or at room temperature and pairs well with whipped cream or vanilla ice cream.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
