Dough:

  • 1 cup warm milk (about 110°F)
  • 1 tablespoon active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg
  • 3 tablespoons unsalted butter, melted
  • 2 1/2 cups all-purpose flour (plus more for dusting)
  • vegetable oil for frying

Maple Glaze:

  • 1/4 cup unsalted butter
  • 1/2 cup pure maple syrup
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Dough: In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let sit for 5–10 minutes until foamy. Add remaining sugar, salt, vanilla, egg, and melted butter. Mix well, then gradually stir in the flour until a soft dough forms. Knead the dough on a floured surface for about 5–7 minutes, until smooth and elastic.
  2. Place the dough in a greased bowl, cover and let rise for 1 hour. Divide into 8 pieces, shape into ovals, and fry in oil until golden.
  3. Maple Glaze: Melt butter, stir in maple syrup, remove from heat, and whisk in powdered sugar, vanilla, and salt until smooth. Brush over warm beaver tails.
