Ingredients
Scale
Sago Pearls
- 1 cup Sago Pearls (Substitute with small tapioca pearls if unavailable)
Fruits
- 2-3 large Mangoes, peeled and diced (Use sweet, ripe varieties like Ataulfo or Tommy Atkins)
Dairy and Milk
- ½ cup Evaporated Milk, chilled (Substitute with coconut cream for a dairy-free option)
- 1 cup Coconut Milk, full-fat (Use low-fat for a lighter version)
- 3 tablespoons Condensed Milk (Adjust to taste)
Jelly
- 1 cup Coconut Jelly (Optional or replaceable with mango jelly)
- 1 cup Mango Jelly
Instructions
- Cook the Sago Pearls: Begin by boiling water in a pot over medium-high heat. Add the sago pearls and cook for about 15 minutes until they turn almost translucent. Remove from heat, cover the pot, and let the sago pearls sit for another 15 minutes to finish cooking.
- Rinse and Soak the Sago Pearls: Drain the cooked sago pearls and rinse them thoroughly under cold water to stop the cooking process. Then, place them in a bowl of cold water to prevent sticking while preparing other ingredients.
- Prepare Mango Puree: In a blender, combine the diced mango and chilled evaporated milk. Blend the mixture until it becomes smooth and creamy, which will add a luscious texture and flavor to the dessert.
- Combine Ingredients: In a large mixing bowl, gently mix the cooked and drained sago pearls, chopped mango pieces, coconut milk, condensed milk, and the mango puree. Stir carefully until all ingredients are well combined without breaking the sago pearls.
- Chill the Dessert: Cover the bowl and refrigerate the mango sago mixture for at least 1 hour. This chilling time allows the flavors to meld beautifully and ensures the dessert is served refreshingly cold.
- Serve and Garnish: Optionally, garnish with fresh mango cubes or mint leaves before serving to add a bright and elegant touch to your tropical dessert.
Notes
- To make the dessert dairy-free, substitute evaporated milk with coconut cream.
- You can adjust condensed milk amount depending on your preferred sweetness level.
- Replacing coconut jelly with mango jelly or omitting jelly altogether will still yield a delicious result.
- For a lighter version, use low-fat coconut milk instead of full-fat.
- Make sure to rinse sago pearls well to avoid clumping and to achieve the ideal chewy texture.
