Oats Mixture:
1cup old-fashioned rolled oats
1cup unsweetened coconut milk
1/2cup plain Greek yogurt
2 tablespoons chia seeds
2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
Toppings:
1 ripe mango, peeled and diced
1/4cup shredded coconut, toasted if desired
Instructions
In a medium bowl or jar, combine oats, coconut milk, Greek yogurt, chia seeds, honey, and vanilla extract. Stir well to combine, then cover and refrigerate overnight or at least 4 hours.
Before serving, stir the oats again to loosen. Top with diced mango and shredded coconut.
Serve chilled, straight from the jar or in a bowl.
Notes
For added crunch, sprinkle with granola or chopped nuts before serving.
