Oats Mixture:

  • 1 cup old-fashioned rolled oats
  • 1 cup unsweetened coconut milk
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract

Toppings:

  • 1 ripe mango, peeled and diced
  • 1/4 cup shredded coconut, toasted if desired

Instructions

  1. In a medium bowl or jar, combine oats, coconut milk, Greek yogurt, chia seeds, honey, and vanilla extract. Stir well to combine, then cover and refrigerate overnight or at least 4 hours.
