Cake:

  • 1 box yellow cake mix (15.25 oz)
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 (11 oz) can mandarin oranges (with juice)

Topping:

  • 1 (20 oz) can crushed pineapple (undrained)
  • 1 (8 oz) tub whipped topping
  • 1 (3.4 oz) package instant vanilla pudding mix

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, combine the cake mix, eggs, oil, and mandarin oranges with their juice. Beat with an electric mixer on medium speed for about 2 minutes, until the batter is light and well combined.

  3. Pour into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Allow the cake to cool completely.
  5. While the cake cools, mix the crushed pineapple (with juice), instant pudding mix, and whipped topping in a medium bowl until fully combined and fluffy.
