1/2cup mashed potatoes (plain, no seasoning)
1/4cup unsalted butter, softened
1 tsp vanilla extract
1/2 tsp salt
1lb (about 4 cups) powdered sugar
2cups shredded sweetened coconut
12oz semisweet or dark chocolate chips
1 tbsp vegetable shortening (optional, for smoother chocolate coating)
Instructions
In a large bowl, mix the mashed potatoes, butter, vanilla, and salt until smooth and well combined.
Gradually mix in the powdered sugar until the mixture is thick and holds its shape.
Stir in the shredded coconut until evenly distributed.
Press the mixture into a greased or parchment-lined 9×13-inch pan and smooth the top. Chill in the refrigerator for at least 1 hour.
Once firm, cut into small squares or rectangles and place on a baking sheet lined with parchment paper.
In a microwave or double boiler, melt the chocolate chips with the vegetable shortening (if using), stirring until smooth.
Dip each square into the melted chocolate using a fork, tapping off excess chocolate, then place back on the parchment-lined sheet.
Let the chocolate set at room temperature or refrigerate until firm.
Notes
Ensure potatoes are plain and cooled before using.
Use a microwave or double boiler to prevent scorching the chocolate.
Store Needhams in an airtight container in the fridge for up to 2 weeks.
