Description
Maine Potato Candy, also known as Needhams, is a classic New England treat made with mashed potatoes, coconut, and chocolate coating for a sweet, creamy candy.
Ingredients
- 1/2 cup mashed potatoes (plain, no seasoning)
- 1/4 cup unsalted butter, softened
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 lb (about 4 cups) powdered sugar
- 2 cups shredded sweetened coconut
- 12 oz semisweet or dark chocolate chips
- 1 tbsp vegetable shortening (optional, for smoother chocolate coating)
Instructions
- In a large bowl, mix the mashed potatoes, butter, vanilla, and salt until smooth and well combined.
- Gradually mix in the powdered sugar until the mixture is thick and holds its shape.
- Stir in the shredded coconut until evenly distributed.
- Press the mixture into a greased or parchment-lined 9×13-inch pan and smooth the top. Chill in the refrigerator for at least 1 hour.
- Once firm, cut into small squares or rectangles and place on a baking sheet lined with parchment paper.
- In a microwave or double boiler, melt the chocolate chips with the vegetable shortening (if using), stirring until smooth.
- Dip each square into the melted chocolate using a fork, tapping off excess chocolate, then place back on the parchment-lined sheet.
- Let the chocolate set at room temperature or refrigerate until firm.
Notes
- Ensure potatoes are plain and cooled before using.
- Use a microwave or double boiler to prevent scorching the chocolate.
- Store Needhams in an airtight container in the fridge for up to 2 weeks.
