For the crust:

1/4cup finely ground pistachios
1/4cup sugar

24ounces cream cheese (softened)
3/4cup granulated sugar
3 large eggs
1/2cup sour cream
1/4cup fresh lemon juice
2 tablespoons fresh lime juice
1 tablespoon lemon zest
1 tablespoon lime zest
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
1/4cup finely chopped pistachios
For the topping:
1cup cherry pie filling
1/4cup shelled pistachios (roughly chopped)
whipped cream (optional)
Instructions
Preheat the oven: Preheat the oven to 325°F (163°C).
Prepare the crust: Combine graham cracker crumbs, ground pistachios, sugar, and melted butter. Press into a 9-inch springform pan and bake for 8 minutes.
Make the filling: Beat cream cheese and sugar, then add eggs one at a time. Mix in sour cream, lemon juice, lime juice, zests, vanilla, almond extract, and pistachios. Pour over crust.
Bake: Bake for 50-60 minutes until set. Cool in the oven, then chill in the refrigerator for at least 4 hours.
Top and serve: Add cherry pie filling, chopped pistachios, and whipped cream before serving.
Notes
For a brighter citrus flavor, increase the zest slightly.
You can use homemade cherry compote instead of pie filling.
This cheesecake holds up well when made a day in advance.
