  • 24 ounces cream cheese (softened)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 cup finely chopped pistachios

For the topping:

  • 1 cup cherry pie filling
  • 1/4 cup shelled pistachios (roughly chopped)
  • whipped cream (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C).
  2. Prepare the crust: Combine graham cracker crumbs, ground pistachios, sugar, and melted butter. Press into a 9-inch springform pan and bake for 8 minutes.
  3. Make the filling: Beat cream cheese and sugar, then add eggs one at a time. Mix in sour cream, lemon juice, lime juice, zests, vanilla, almond extract, and pistachios. Pour over crust.
  4. Bake: Bake for 50-60 minutes until set. Cool in the oven, then chill in the refrigerator for at least 4 hours.
  5. Top and serve: Add cherry pie filling, chopped pistachios, and whipped cream before serving.

  • For a brighter citrus flavor, increase the zest slightly.
