For the cream cheese filling:
8oz cream cheese, softened
1/4cup granulated sugar
1 teaspoon vanilla extract
For the cinnamon sugar topping:
1/4cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoons unsalted butter, melted
Instructions
Preheat oven and prepare muffin tin: Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
Prepare muffin batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon. In a separate bowl, whisk melted butter, buttermilk, eggs, and vanilla extract. Combine wet and dry ingredients until just combined.
Make cream cheese filling: Beat softened cream cheese, sugar, and vanilla until smooth.
Assemble muffins: Fill each muffin liner halfway with batter, add a teaspoon of cream cheese filling, then top with more batter. Sprinkle cinnamon sugar topping over each muffin.
