  • 1/4 cup unsweetened applesauce
  • 2 tablespoons coconut oil, melted
  • 1/3 cup coconut sugar or brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Additional:

  • 1/3 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, whisk together whole wheat flour, baking soda, and salt.
  3. Mix wet ingredients: In another bowl, combine applesauce, melted coconut oil, coconut sugar, egg, and vanilla extract until smooth.
  4. Combine ingredients: Gradually add dry ingredients to wet ingredients, stirring until just combined. Fold in mini chocolate chips.
  5. Bake: Using a tablespoon, scoop out the dough onto the prepared baking sheet, spacing them apart. Flatten the tops gently. Bake for 8–10 minutes until lightly golden.

Notes

  • For a dairy-free version, use dairy-free chocolate chips.
  • You can substitute maple syrup for coconut sugar, but reduce the applesauce slightly for added moisture.
