Ingredients

Units Scale

Fries:

  • 1 (28-ounce) bag frozen French fries or 4 cups fresh-cut fries
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil (if baking fresh fries)

Toppings:

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/3 cup cooked bacon (crumbled)
  • 1/4 cup pickled jalapeños (sliced)
  • 1/4 cup green onions (chopped)
  • 1/3 cup ranch dressing or spicy aioli
  • Optional: hot sauce for drizzling

Instructions

  1. Prepare the Fries: Cook the French fries according to package instructions or bake fresh-cut fries at 425°F (220°C) tossed with olive oil and Cajun seasoning until crispy, about 25–30 minutes.
  2. Assemble: While the fries are still hot, layer them on a serving platter or sheet pan. Sprinkle with cheddar and Monterey Jack cheeses and broil for 2–3 minutes until the cheese is melted and bubbly.
  3. Add Toppings: Top the fries with crumbled bacon, pickled jalapeños, and green onions.
  4. Finish: Drizzle with ranch dressing or spicy aioli, and add hot sauce if desired. Serve immediately.

Notes

  • You can swap out ranch for blue cheese dressing or use a homemade voodoo sauce with mayo, ketchup, hot sauce, and Cajun spices.
  • Great as a party appetizer or game-day snack.
