Description

Loaded Smothered Beef Burritos are hearty, flavorful burritos filled with seasoned ground beef, beans, and cheese, then smothered in a rich red sauce and baked to perfection.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) refried beans
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup sour cream (optional, for topping)
  • 1/4 cup chopped green onions (optional, for topping)
  • 1/4 cup chopped fresh cilantro (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and water to the beef. Simmer for 5 minutes until thickened.
  4. Warm the refried beans and rice separately.
  5. Lay out the tortillas and spread a layer of refried beans in the center of each.
  6. Add a scoop of seasoned beef, some rice, and a mix of both cheeses.
  7. Roll each tortilla into a burrito and place seam-side down in a baking dish.
  8. Pour enchilada sauce over the top of the burritos.
  9. Sprinkle with remaining cheese.
  10. Bake uncovered for 20 minutes until cheese is melted and bubbly.
  11. Top with sour cream, green onions, and cilantro before serving, if desired.

Notes

  • You can substitute ground beef with ground turkey or shredded chicken.
  • Add jalapeños or hot sauce for extra spice.
  • Leftovers store well in the refrigerator for up to 3 days.
