Description
Loaded Smothered Beef Burritos are hearty, flavorful burritos filled with seasoned ground beef, beans, and cheese, then smothered in a rich red sauce and baked to perfection.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) refried beans
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- 1 can (10 oz) red enchilada sauce
- 1/2 cup sour cream (optional, for topping)
- 1/4 cup chopped green onions (optional, for topping)
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Simmer for 5 minutes until thickened.
- Warm the refried beans and rice separately.
- Lay out the tortillas and spread a layer of refried beans in the center of each.
- Add a scoop of seasoned beef, some rice, and a mix of both cheeses.
- Roll each tortilla into a burrito and place seam-side down in a baking dish.
- Pour enchilada sauce over the top of the burritos.
- Sprinkle with remaining cheese.
- Bake uncovered for 20 minutes until cheese is melted and bubbly.
- Top with sour cream, green onions, and cilantro before serving, if desired.
Notes
- You can substitute ground beef with ground turkey or shredded chicken.
- Add jalapeños or hot sauce for extra spice.
- Leftovers store well in the refrigerator for up to 3 days.
