  • 1 pound ground beef
  • 1/2 cup diced onion
  • Salt and pepper to taste

Additional Ingredients:

  • 1 cup shredded cheddar cheese
  • 1 can (about 15 oz) corn kernels, drained
  • 1 cup cooked pasta (penne or elbow)
  • 1/2 cup BBQ sauce

Instructions

  1. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef with diced onion, salt, and pepper until browned and cooked through. Drain any excess fat.
  2. Combine Ingredients: In a large bowl, mix the cooked pasta, browned beef and onion, drained corn, BBQ sauce, and half of the shredded cheddar cheese until well combined.
  3. Assemble and Bake: Transfer the mixture into a greased 9×13-inch baking dish. Spread it out evenly and sprinkle the remaining cheddar cheese on top. Bake at 375°F (190°C) for 20-25 minutes until bubbly and cheese is golden.
  4. Serve: Remove from the oven and let it sit for a few minutes before serving.

Notes

  • For more heat, add diced jalapeños or hot sauce.
  • Try different cheese combinations like Monterey Jack or mozzarella.
  • Add cooked bacon bits for extra flavor.
  • For a vegetarian version, substitute the beef with beans or lentils.
  • Leftovers can be stored in the fridge for up to 3 days; reheat in the oven at 350°F for 10-15 minutes or microwave individual servings.
