1/2cup diced onion
Salt and pepper to taste
Additional Ingredients:
1cup shredded cheddar cheese
1 can (about 15 oz) corn kernels, drained
1cup cooked pasta (penne or elbow)
1/2cup BBQ sauce
Instructions
Cook the Ground Beef: In a skillet over medium heat, cook the ground beef with diced onion, salt, and pepper until browned and cooked through. Drain any excess fat.
Combine Ingredients: In a large bowl, mix the cooked pasta, browned beef and onion, drained corn, BBQ sauce, and half of the shredded cheddar cheese until well combined.
Assemble and Bake: Transfer the mixture into a greased 9×13-inch baking dish. Spread it out evenly and sprinkle the remaining cheddar cheese on top. Bake at 375°F (190°C) for 20-25 minutes until bubbly and cheese is golden.

Notes
For more heat, add diced jalapeños or hot sauce.
Try different cheese combinations like Monterey Jack or mozzarella.
Add cooked bacon bits for extra flavor.
For a vegetarian version, substitute the beef with beans or lentils.
Leftovers can be stored in the fridge for up to 3 days; reheat in the oven at 350°F for 10-15 minutes or microwave individual servings.
