Shortbread Cookies:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • Green gel food coloring

Sprinkle Mix-ins:

  • 1/2 cup rainbow sprinkles
  • 1/2 cup green sprinkles

Instructions

  1. Preheat oven and prepare baking sheet: Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Mix butter, sugar, and vanilla: In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in vanilla extract.
  3. Add flour and color: Gradually add flour and salt, mixing until a dough forms. Add green food coloring and mix until evenly tinted.
  4. Incorporate sprinkles: Fold in rainbow and green sprinkles.
  5. Shape and bake: On a lightly floured surface, roll dough into a rectangle about 1/2 inch thick. Cut into small bite-sized squares. Place squares onto the prepared baking sheet about 1 inch apart. Bake for 14–16 minutes, or until edges are set but not browned.
  6. Cool and serve: Cool completely before serving.
