For the Filling:

  • 2 large eggs
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon lemon zest
  • powdered sugar for dusting

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Make the crust: Combine flour and sugar, then cut in cold butter until crumbly. Press into pan and bake until golden.
  3. Prepare the filling: Whisk together eggs, sugar, flour, lemon juice, and zest until smooth.
  4. Add filling to crust: Pour the lemon filling over the hot crust and bake until set.
  5. Cool and serve: Let cool, refrigerate, then slice and dust with powdered sugar before serving.

Notes
