Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil

Lemon Shallot Sauce:

  • 2 tablespoons unsalted butter, divided
  • 2 large shallots, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1/4 cup heavy cream
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Garnish:

  • 1 tablespoon chopped fresh parsley

Instructions

  1. Season the Chicken: Season chicken breasts on both sides with salt and pepper.
  2. Sear the Chicken: In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. Prepare the Sauce: In the same pan, reduce heat to medium and add the remaining tablespoon of butter. Sauté shallots for 2–3 minutes until soft, then add garlic and cook for 30 seconds. Deglaze the pan with chicken broth, scraping up any browned bits. Stir in lemon juice, lemon zest, Dijon mustard, and cream. Let the sauce simmer for 3–4 minutes until slightly thickened.
  4. Combine and Serve: Return chicken to the skillet, spoon sauce over the top, and cook for another 2 minutes to heat through. Garnish with fresh parsley and serve.

Notes

  • Serve over mashed potatoes, rice, or pasta to soak up the sauce.
  • Chicken thighs can be used instead of breasts for a juicier result.
