1 1/2cups granulated sugar
1/2cup milk
1/4 teaspoon salt
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1/2 teaspoon vanilla extract
3cups quick-cooking oats
1/2cup shredded sweetened coconut (optional)
Instructions
In a medium saucepan, combine butter, sugar, milk, and salt over medium heat. Bring to a boil for 1 minute.
Remove from heat, stir in lemon zest, lemon juice, and vanilla extract.
Add oats and coconut (if using), mix well.
Drop onto parchment paper, let cool for 30 minutes to set.
Notes
For extra zing, add 1/4 teaspoon lemon extract.
Store in an airtight container at room temperature for up to 5 days or refrigerate for a firmer texture.
