  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Optional: coarse sugar for topping

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or grease.
  2. Combine Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In another bowl, mix melted butter, eggs, yogurt, lemon juice, lemon zest, and vanilla.
  4. Combine Wet and Dry: Pour wet ingredients into the dry mixture and gently mix until just combined.
  5. Fill Muffin Cups: Divide batter evenly into muffin cups, filling each about 3/4 full.
  6. Bake: Sprinkle with coarse sugar if desired, then bake for 18–20 minutes until a toothpick comes out clean.
  7. Cool and Serve: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
