  • 1/2 cup unsalted butter (softened)
  • 1/4 cup powdered sugar

For the Filling:

  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest

For the Topping:

  • Powdered sugar for dusting

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish. Combine flour, softened butter, and powdered sugar. Press into the baking dish and bake for 15–18 minutes.
  2. Make the Filling: Whisk together eggs, granulated sugar, flour, baking powder, lemon juice, and lemon zest until smooth. Pour over the hot crust.
  3. Bake and Serve: Bake for 20–25 minutes until set. Cool in the pan, dust with powdered sugar, and slice into bars.

Notes
