  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup orzo pasta
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 6 cups chicken broth
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For Garnish:

  • Fresh parsley, chopped
  • Lemon slices

Instructions

  1. Cook the Chicken: In a large pot, sauté the diced chicken until browned. Remove and set aside.
  2. Sauté Aromatics: In the same pot, sauté the onion, carrots, and celery until softened.
  3. Add Ingredients: Return the chicken to the pot. Add chicken broth, lemon juice, lemon zest, garlic, thyme, salt, and pepper. Bring to a simmer.
