Main Ingredients:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons capers (drained)
  • 1/4 cup chicken broth or dry white wine
  • 1/2 teaspoon lemon zest
  • Salt and black pepper to taste

Optional:

  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat Fats: In a small skillet, heat the butter and olive oil over medium heat.
  2. Sauté Garlic: Add the minced garlic and sauté for 30–60 seconds until fragrant, being careful not to brown.
  3. Add Ingredients: Stir in lemon juice, capers, chicken broth or wine, and lemon zest. Simmer for 2–3 minutes until slightly reduced.
  4. Season and Finish: Season with salt and pepper to taste. Remove from heat, stir in fresh parsley if using, and serve warm over desired dish.

Notes

  • This sauce complements pan-seared fish like salmon or cod exceptionally well.
  • For a vegetarian version, substitute vegetable broth for chicken broth or wine.
  • For a richer texture, whisk in 1 tablespoon of cold butter at the end.
