  • 1 tablespoon lemon zest
  • 1/2 cup fresh lemon juice
  • 1 cup fresh or frozen blueberries (if frozen, do not thaw)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. Prepare the crust: Combine flour and powdered sugar, then cut in the cold butter until the mixture resembles coarse crumbs. Press into the pan and bake until golden.
  3. Make the filling: Whisk together eggs, sugar, flour, lemon zest, and lemon juice. Gently fold in the blueberries. Pour over the warm crust and bake until set.
  4. Cool and serve: Let the bars cool in the pan, then refrigerate before slicing. Dust with powdered sugar before serving.
