Ingredients

Units Scale

For the Shortbread Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the Lavender Lemon Filling:

  • 1 tablespoon dried culinary lavender
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Make the Shortbread Crust: In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the flour and salt, and mix until crumbly. Press the mixture into the prepared pan and bake for 20-25 minutes until lightly golden.
  3. Prepare the Lavender Lemon Filling: In a small saucepan, heat the granulated sugar and dried lavender over low heat until fragrant. Let cool. In a separate bowl, whisk together the eggs, lemon juice, lemon zest, flour, and baking powder. Strain the lavender-infused sugar and mix it into the lemon mixture.
  4. Assemble and Bake: Pour the lemon filling over the baked crust and return to the oven. Bake for 25-30 minutes or until the filling is set. Allow to cool completely in the pan before dusting with powdered sugar and cutting into bars.

Notes

  • For a more intense lavender flavor, you can steep the lavender in the sugar for a longer period.
  • These bars are best served chilled and can be stored in the refrigerator for up to 3 days.
