Description

These Lavender Honey Crunch Cookies are a delightful combination of floral lavender, sweet honey, and a satisfying crunch, creating a unique and flavorful treat for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey
  • 1/4 cup sugar
  • 1 tablespoon dried lavender buds
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup rolled oats
  • 1/4 cup chopped walnuts or almonds (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, honey, and sugar until light and fluffy.
  3. Add the vanilla extract and dried lavender buds to the mixture, and mix until evenly incorporated.
  4. In a separate bowl, whisk together the flour, salt, and oats.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. If using, fold in the chopped walnuts or almonds for added crunch.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Flatten each cookie slightly with the back of a spoon.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  10. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
