- 1 tablespoon dried lavender buds

- 1/4 cup chopped walnuts or almonds (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, honey, and sugar until light and fluffy.
- Add the vanilla extract and dried lavender buds to the mixture, and mix until evenly incorporated.
- In a separate bowl, whisk together the flour, salt, and oats.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- If using, fold in the chopped walnuts or almonds for added crunch.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
