Cheesecake Bars:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon dried culinary lavender
  • 1/2 cup blueberry preserves or compote
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Prepare the crust: Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the pan.
  3. Make the cheesecake batter: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract and lavender.
  4. Assemble the bars: Pour batter over crust, swirl in blueberry preserves, and top with fresh blueberries.
  5. Bake: Bake for 35–40 minutes until set. Cool, then refrigerate for at least 4 hours before cutting into bars.
