Cheesecake Bars:
1 1/2cups graham cracker crumbs
1/4cup granulated sugar
6 tablespoons unsalted butter, melted
16oz cream cheese, softened
1/2cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon dried culinary lavender
1/2cup blueberry preserves or compote
1cup fresh blueberries
Instructions
Preheat the oven: Preheat the oven to 325°F (160°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Prepare the crust: Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the pan.
Make the cheesecake batter: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract and lavender.
Assemble the bars: Pour batter over crust, swirl in blueberry preserves, and top with fresh blueberries.
Bake: Bake for 35–40 minutes until set. Cool, then refrigerate for at least 4 hours before cutting into bars.
