Italian Sausage Mixture:
1 tablespoon olive oil
1pound Italian sausage (mild or hot, casings removed)
1 small yellow onion, diced
3 cloves garlic, minced
1 tablespoon tomato paste
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes (optional)
Soup Base:
1 (28-ounce) can crushed tomatoes
4cups low-sodium chicken broth
1cup water
Additional Ingredients:
8 lasagna noodles, broken into pieces
1/2cup ricotta cheese
1cup shredded mozzarella cheese
1/4cup grated Parmesan cheese
2 tablespoons chopped fresh basil
Salt and pepper to taste
Instructions
Prepare Italian Sausage Mixture: Heat olive oil in a large pot, cook sausage until browned. Add onion, cook until softened. Stir in garlic, tomato paste, oregano, and red pepper flakes. Cook until fragrant.
Create Soup Base: Add crushed tomatoes, chicken broth, and water. Bring to a boil, then simmer for 10 minutes.
Add Noodles and Finish Soup: Add broken lasagna noodles, simmer until tender. Season with salt and pepper.
Prepare Cheese Mixture: Mix ricotta, mozzarella, and Parmesan in a bowl.
Serve: Ladle soup into bowls, top with cheese mixture, basil, and serve hot.
Notes
You can substitute ground turkey or beef for the sausage.
