Main Ingredients:

  • 2 cups canned sweet corn (drained)
  • 1/4 cup mayonnaise
  • 2 tablespoons unsalted butter
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 green onions (thinly sliced)

Garnish:

  • chopped parsley or extra green onion for garnish (optional)

Instructions

  1. Combine Ingredients: In a mixing bowl, combine drained corn, mayonnaise, sugar, salt, pepper, and half of the green onions.
  2. Cook Mixture: Melt butter in an oven-safe skillet over medium heat. Add corn mixture and cook for 3–4 minutes until heated through and slightly golden.
  3. Add Cheese: Sprinkle mozzarella over the top. Transfer skillet to a preheated broiler and broil for 2–3 minutes until cheese is melted and bubbly.
  4. Garnish and Serve: Remove from the oven, garnish with extra green onion or parsley, and serve hot.

Notes

  • For extra flavor, add grated Parmesan or use a blend of mozzarella and cheddar.
  • Serve hot as a side dish or dip with tortilla chips or toasted bread.
