Ingredients

Ground Beef or Ground Turkey:

1 pound

Onion:

1 medium, diced

Garlic:

2 cloves, minced

Carrots:

3 medium, sliced

Celery Stalks:

2, sliced

Red Bell Pepper:

1, diced

Potatoes:

2 medium, peeled and cubed

Diced Tomatoes:

1 (15-ounce) can with juice

Kidney Beans:

1 (15-ounce) can, drained and rinsed

Corn:

1 (15-ounce) can, drained

Beef or Chicken Broth:

6 cups

Italian Seasoning:

1 teaspoon

Smoked Paprika:

1/2 teaspoon

Chili Powder:

1/2 teaspoon

Black Pepper:

1/2 teaspoon

Salt:

1 teaspoon (to taste)

Bay Leaf:

1

Fresh Spinach or Kale:

2 cups, chopped (added near the end)

Instructions

  1. Cook the Ground Beef or Turkey: In a large skillet, cook the ground beef or turkey with the onion and garlic over medium heat until browned, about 5 minutes. Drain any excess fat and transfer to the crock pot.
  2. Add Ingredients to Crock Pot: Add the carrots, celery, bell pepper, potatoes, diced tomatoes, kidney beans, corn, broth, Italian seasoning, smoked paprika, chili powder, black pepper, salt, and bay leaf. Stir to combine.
  3. Cook in Crock Pot: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the vegetables are tender.
  4. Stir in Spinach or Kale: About 15 minutes before serving, stir in the fresh spinach or kale. Remove the bay leaf before serving. Taste and adjust seasoning as needed.
  5. Serve: Serve hot with crusty bread.
