1/2cup canned coconut milk
1/4cup cream of coconut
1/4cup fresh key lime juice
1/2 teaspoon key lime zest
2ounces cream cheese (softened)
1cup frozen pineapple chunks
1/2cup ice
For Garnish:
1/2cup crushed graham crackers
whipped cream (optional)
lime slices or zest for garnish
Instructions
Blend the Ingredients: In a blender, combine the coconut milk, cream of coconut, key lime juice, lime zest, cream cheese, frozen pineapple, and ice. Blend until smooth and creamy.
Adjust Consistency: If the mixture is too thick, add a splash more coconut milk to loosen it.
Prepare Glasses: To garnish, dip the rim of each glass in a bit of lime juice, then press into crushed graham crackers to coat.
Serve: Pour the Piña Colada mixture into the prepared glasses. Top with whipped cream and garnish with lime zest or a lime slice if desired. Serve immediately.
Notes
For an adult version, add 1 to 1.5 ounces of white rum before blending.
