Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream butter and sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy.
Add wet ingredients: Beat in the egg, key lime juice, and zest until well combined.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
Mix the dough: Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
Bake: Scoop tablespoon-sized amounts of dough, roll into balls, place on the baking sheet, flatten slightly, and bake for 10–12 minutes or until edges are lightly golden.
