Cookies:

Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons key lime juice
  • 1/2 teaspoon key lime zest

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add wet ingredients: Beat in the egg, key lime juice, and zest until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Mix the dough: Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms.
  6. Bake: Scoop tablespoon-sized amounts of dough, roll into balls, place on the baking sheet, flatten slightly, and bake for 10–12 minutes or until edges are lightly golden.
