Coating:

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add Wet Ingredients: Beat in the egg, key lime juice, and zest until well combined.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Form Dough: Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet about 2 inches apart.
