Egg Salad:

  • 6 large hard-boiled eggs, peeled and chopped
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup diced avocado
  • 1/2 cup chopped cooked chicken breast
  • 1/4 cup diced cherry tomatoes
  • 1/4 cup crumbled blue cheese (or feta)
  • 2 tablespoons chopped green onion

Dressing:

  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the chopped eggs, bacon, avocado, chicken, cherry tomatoes, blue cheese, and green onion.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
