Egg Salad:
6 large hard-boiled eggs, peeled and chopped
1/2cup cooked and crumbled bacon
1/2cup diced avocado
1/2cup chopped cooked chicken breast
1/4cup diced cherry tomatoes
1/4cup crumbled blue cheese (or feta)
2 tablespoons chopped green onion
Dressing:
1/4cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the chopped eggs, bacon, avocado, chicken, cherry tomatoes, blue cheese, and green onion.
In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
Pour the dressing over the egg mixture and gently stir until well coated.
Taste and adjust seasoning if needed. Serve chilled on lettuce wraps, in a bowl, or as a filling for low-carb wraps.
Notes
Use rotisserie chicken for convenience.
This salad keeps well in the refrigerator for up to 3 days.
