Description

Delicious and keto-friendly cinnamon rolls made with mozzarella cheese, almond flour, and stevia for a low-carb, sugar-free treat. These cinnamon rolls are soft, flavorful, and perfect for those following a ketogenic diet or anyone looking to enjoy a healthier version of a classic pastry.

Ingredients

Scale

Dough

  • 1 1/2 cups mozzarella cheese
  • 2 tablespoons cream cheese
  • 3/4 cup almond flour
  • 1 egg white
  • 1/2 teaspoon baking powder

Filling

  • 1 teaspoon vanilla extract
  • 1 teaspoon liquid stevia
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Melt Cheeses: In a microwave-safe bowl or on the stovetop, melt the mozzarella and cream cheese together until fully melted and smooth, forming the base for your dough.
  3. Make Dough: Add the almond flour, baking powder, and egg white to the melted cheese mixture. Mix well until a cohesive dough forms that can be rolled out.
  4. Roll Dough: Place the dough between two sheets of parchment paper and roll it out until approximately 1/4 inch thick, ensuring even thickness for consistent baking.
  5. Prepare Filling: In a small bowl, combine the liquid stevia, vanilla extract, and ground cinnamon. Mix thoroughly to form your cinnamon filling.
  6. Apply Filling & Roll: Brush the cinnamon mixture evenly over the rolled-out dough. Carefully roll the dough into a log shape using the parchment paper to assist.
  7. Slice Rolls: Slice the rolled dough log into 6 evenly sized pieces to create individual cinnamon rolls and place them cut side down on the prepared baking sheet.
  8. Bake: Bake the cinnamon rolls in the preheated oven for 35 minutes or until they turn golden brown on top indicating they are cooked through.
  9. Cool & Serve: Remove the rolls from the oven and let them cool for a few minutes before serving to allow them to set and enhance flavor.

Notes

  • Use full-fat mozzarella and cream cheese for best texture and flavor.
  • Liquid stevia is preferred for a no-sugar option; adjust sweetness to taste.
  • Be gentle when rolling the dough as it’s delicate due to cheese content.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a microwave for 20-30 seconds before serving for a fresh-baked feel.
