Ingredients
Scale
Dough
- 1 1/2 cups mozzarella cheese
- 2 tablespoons cream cheese
- 3/4 cup almond flour
- 1 egg white
- 1/2 teaspoon baking powder
Filling
- 1 teaspoon vanilla extract
- 1 teaspoon liquid stevia
- 1 teaspoon ground cinnamon
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Melt Cheeses: In a microwave-safe bowl or on the stovetop, melt the mozzarella and cream cheese together until fully melted and smooth, forming the base for your dough.
- Make Dough: Add the almond flour, baking powder, and egg white to the melted cheese mixture. Mix well until a cohesive dough forms that can be rolled out.
- Roll Dough: Place the dough between two sheets of parchment paper and roll it out until approximately 1/4 inch thick, ensuring even thickness for consistent baking.
- Prepare Filling: In a small bowl, combine the liquid stevia, vanilla extract, and ground cinnamon. Mix thoroughly to form your cinnamon filling.
- Apply Filling & Roll: Brush the cinnamon mixture evenly over the rolled-out dough. Carefully roll the dough into a log shape using the parchment paper to assist.
- Slice Rolls: Slice the rolled dough log into 6 evenly sized pieces to create individual cinnamon rolls and place them cut side down on the prepared baking sheet.
- Bake: Bake the cinnamon rolls in the preheated oven for 35 minutes or until they turn golden brown on top indicating they are cooked through.
- Cool & Serve: Remove the rolls from the oven and let them cool for a few minutes before serving to allow them to set and enhance flavor.
Notes
- Use full-fat mozzarella and cream cheese for best texture and flavor.
- Liquid stevia is preferred for a no-sugar option; adjust sweetness to taste.
- Be gentle when rolling the dough as it’s delicate due to cheese content.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a microwave for 20-30 seconds before serving for a fresh-baked feel.
