  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water

Casserole Layers:

  • 1 (16.3 oz) can refrigerated biscuit dough
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese (divided)
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 1 (4 oz) can sliced jalapeños (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C).
  2. Cook Ground Beef: In a skillet, cook the ground beef until browned. Drain excess grease and stir in taco seasoning and water. Simmer for 5 minutes.
  3. Prepare Crust: Press biscuit dough into a greased 9×13-inch baking dish to form a crust. Bake for 8–10 minutes.
  4. Make Sour Cream Mixture: Mix sour cream, mayonnaise, half of the cheddar cheese, and chopped onion in a bowl.
  5. Assemble Casserole: Layer cooked beef over the pre-baked crust, followed by bell pepper, diced tomatoes, and jalapeños. Spread sour cream mixture over the top and sprinkle with remaining cheddar cheese.
  6. Bake: Bake for 30–35 minutes until bubbly and golden.
  7. Serve: Let cool slightly before slicing and serving.
