For the Beef Layer:
1pound ground beef
1 packet taco seasoning mix
1/2cup water
1 (16-ounce) can diced tomatoes with green chilies, drained
For the Creamy Layer:
1/2cup sour cream
1/2cup mayonnaise
1cup shredded cheddar cheese, divided
1cup shredded Monterey Jack cheese, divided
1 small onion, chopped
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Additional:
1 (8-count) can refrigerated biscuits
Instructions
Preheat and Prepare: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Cook Beef: Brown ground beef in a skillet over medium heat, drain excess fat, add taco seasoning and water, simmer for 5 minutes, then stir in diced tomatoes.
Mix Creamy Layer: In a bowl, combine sour cream, mayonnaise, half of cheddar and Monterey Jack cheeses, onion, garlic powder, salt, and pepper.
Assemble: Press biscuits into the dish for crust, top with beef mixture, then spread sour cream mixture and remaining cheeses over it.
Bake: Bake for 30–35 minutes until cheese is melted, bubbly, and biscuits are cooked. Rest for 5–10 minutes before serving.
Notes
You can use Greek yogurt instead of sour cream and add jalapeños or bell peppers for extra flavor.
