Instructions
Egg Mixture: In a medium bowl, whisk together the eggs, milk, sugar, soy sauce, and vanilla extract until smooth and well combined.
French Toast: Cut the bread slices into thirds or halves for easier rolling if desired. Heat a rectangular tamagoyaki pan or small nonstick skillet over medium-low heat and lightly grease with butter. Pour a thin layer of the egg mixture into the pan, tilting to coat the bottom. Place a slice of bread at one end of the pan and, as the egg starts to set, gently roll the bread across the pan, folding the egg around it. Push the roll to one side and add more egg mixture to the pan, then roll again. Repeat until all egg and bread is used.
Serving: Continue cooking, turning gently, until the roll is golden and cooked through. Let rest for 1–2 minutes, then slice into thick rounds. Serve warm with maple syrup, sweet soy glaze, or a dusting of powdered sugar and berries.
Notes
You can flavor the egg mixture more traditionally with mirin and dashi in place of vanilla and milk for a savory twist.
Use day-old bread for better texture and absorption.
