  • 1 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter (cubed)
  • 1/4 cup cold shortening
  • 1/2 cup ice water

For the filling:

  • 1 lb ground beef
  • 1 tablespoon vegetable oil
  • 1 small onion (finely chopped)
  • 2 green onions (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1 teaspoon curry powder
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup breadcrumbs

For egg wash:

  • 1 egg
  • 1 tablespoon water

Instructions

  1. Make the pastry: In a large bowl, combine flour, turmeric, and salt. Cut in the butter and shortening until mixture resembles coarse crumbs. Gradually add ice water and mix until dough comes together. Chill for 30 minutes.
  2. Prepare the filling: Sauté onions, green onions, and garlic. Add beef, seasonings, broth, and breadcrumbs. Cook until thickened, then cool.
  3. Assemble the patties: Roll out dough, cut into circles, fill with beef mixture, fold, seal, and brush with egg wash.
  4. Bake: Bake patties until golden brown and flaky, about 25-30 minutes. Serve warm.

Notes

  • For spicier patties, increase the cayenne or add chopped Scotch bonnet pepper.
  • These patties can be made ahead and frozen unbaked or baked for quick meals later.
