Cookies:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Filling:

  • 1/3 cup fruit jam or preserves (such as raspberry, strawberry, or apricot)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add egg and vanilla: Beat in the egg and vanilla extract until well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Form dough balls: Roll heaping teaspoons of dough into balls and place them 2 inches apart on the prepared baking sheet.
  7. Add jam filling: Use your thumb or the back of a small spoon to make an indent in the center of each dough ball. Fill each indentation with about 1/2 teaspoon of jam.
  8. Bake: Bake for 12–14 minutes, or until the edges are lightly golden.
  9. Cool and serve: Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
