Ingredients

Units Scale

Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Peach-Jalapeño Glaze:

  • 2 fresh peaches (peeled and sliced)
  • 1 jalapeño (seeded and finely diced)
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 tablespoon butter
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme

Instructions

  1. Season the chicken: Season chicken breasts with salt and pepper. Sear in a skillet until cooked through. Set aside.
  2. Prepare the glaze: In the same skillet, cook peaches and jalapeño in butter. Add honey, vinegar, mustard, garlic, and thyme. Simmer until thickened.
  3. Glaze the chicken: Return chicken to the skillet and spoon peach-jalapeño glaze over the top. Cook until heated through.
  4. Serve: Serve hot with preferred sides.

Notes

  • For extra spice, leave the jalapeño seeds or add red pepper flakes.
  • You can use grilled or baked chicken instead of searing.
